Cocoa Rouge Cupcakes

40g Makana's Cocoa Rouge Unsweetened Cocoa Powder

130g all-purpose flour

¾ tsp baking powder

¾ tsp baking soda

¼ tsp salt

110g white sugar

100g brown sugar

1 egg

125 ml milk

¼ cup grapeseed oil

1 tsp vanilla

125 ml boiling water

Preheat oven to 180°C conventional or 160ºC fan-forced. Line a 12-hole muffin tray with paper cases.
Sift the dry ingredients into a large bowl, then add the sugars and stir in. Add the egg, milk, oil and vanilla then beat with a mixer until combined. Scrape the sides of the bowl then add the boiling water and mix until just combined (the batter will be runny).
Pour the batter into a measuring cup or jug and pour evenly into each paper case until ¾ filled (don’t over fill or the mixture will overflow).
Place in the oven and bake for 20-22 minutes or until a tester inserted in the centre comes out clean. Allow to cool before decorating
Chocolate Icing

225g icing sugar

2 tbsps Makana's Cocoa Rouge Unsweetened Cocoa Powder

50g butter, softened

2-3 tbsps hot water

Place icing and cocoa powder in a medium bowl and stir to combine. Add softened butter and pour some of the hot water over the top.

Mix together with a knife or spatula, adding more water as required to achieve a smooth, spreadable consistency. Pipe on cupcakes once cool.

Once your cupcakes are iced with chocolate frosting, try these easy decorations to bring them to life!

Fondant Carrots
  1. Roll orange fondant into small carrot shapes and add shallow lines for texture.

  2. Shape green fondant into tiny strands and attach as leaves.

  3. Insert the carrots at an angle into the icing.

Bunny Ears
  1. Cut two long ear shapes from white fondant.

  2. Slice a pink mini marshmallow in half and press onto the fondant as the inner ears.

  3. Let dry for a few minutes, then stick them upright in the icing.

Bunny Butt
  1. Roll white fondant into a small ball (body) and two flattened ovals (feet).

  2. Attach pink marshmallow pieces as footpads.

  3. Stick on a mini marshmallow for the tail.

  4. Place on the cupcake so it looks like a bunny burrowing in!
