Makana Chocolate Self-Saucing Mug Pudding

When the craving for something warm and chocolatey strikes, this individual self-saucing pudding is the perfect answer. Made in a mug and ready in just a few minutes, it’s a wonderfully simple dessert for one—especially served warm with a scoop of vanilla ice cream.

Ingredients
For the pudding:
25g plain flour, approximately 3 level tablespoons
25g caster sugar, approximately 2 tablespoons
1½ tablespoons Makana's Cocoa Rouge Unsweetened Cocoa Powder
½ teaspoon baking powder
Pinch of salt
3 tablespoons milk
1 tablespoon butter, melted
¼ teaspoon vanilla extract
For the sauce:
1½ tablespoons soft brown sugar
1 teaspoon Makana's Cocoa Rouge Unsweetened Cocoa Powder
3 tablespoons boiling water
To serve:
Vanilla ice cream, softly whipped cream or an extra piece of chocolate
Method
Lightly grease a microwave-safe mug or ramekin with a capacity of at least 350–400ml. Place it on a small plate in case the sauce bubbles over.
In a small bowl, combine the plain flour, caster sugar, cocoa powder, baking powder and salt.
Add the milk, melted butter and vanilla. Stir just until the mixture forms a smooth batter.
Spoon the batter into the prepared mug and smooth the surface.
Combine the brown sugar and cocoa powder, then sprinkle the mixture evenly over the batter.
Carefully pour the boiling water over the back of a teaspoon onto the pudding. Do not stir—the water will sink through the pudding during cooking and form the sauce underneath.
Microwave on high until the top is risen and just set:
- 900–1000W microwave: begin with 60 seconds
- 700–800W microwave: begin with 90 seconds
If necessary, continue cooking in 10-second bursts. The centre should remain slightly soft rather than completely firm.
Leave the pudding to stand for one minute. The mug and sauce will be very hot.
Serve immediately, ideally with vanilla ice cream melting over the top.
