Baulois Fondant
Rich, gooey, and utterly decadent – the perfect recipe for a Mother’s Day treat!
5 eggs
100g white sugar
40g brown sugar
200g Makana's Bittersweet Baking Chips
200g salted butter
1 tbsp flour
2 tbsp salted caramel sauce
Preheat your oven to 210°C (410°F), fan-forced, and line a cake tin (20cm / 8-inch round) with baking paper. If you don't have a pastry ring, a springform pan or a regular cake tin with high sides works just fine—just be sure to line the base and sides with baking paper to help remove the cake later.
Melt the baking chips in butter in a double boiler or in the microwave in 30 second intervals. Add the salted caramel sauce and mix in until fully incorporated. Set aside.
Whisk the eggs and sugar until the mixture becomes pale and doubles in volume. Pour in the melted chocolate, butter and caramel mixture into the eggs and whisk until mixed through. Add the flour and gently fold it in.
Pour the mix in the prepared cake pan, then bake for 5 minutes at 210°C. Lower the temperate to 120°C and bake for another 35 minutes.
Once out of the oven, allow the fondant to cool to room temperature, then refrigerate for 2 hours before gently removing the ring.
